Wat is zuurkool?
Zuurkool (uitgesproken als / s aʊɚˌ k aʊ t /) is een gefermenteerd voedsel. Het is een van de meest voorkomende en oudste vormen van gekonfijte kool (zoals kimchi). Zuurkool bevat een grote hoeveelheid melkzuur, vitamine A, B, C en K en mineralen en heeft weinig calorieën (ongeveer 80 kJ / 100 g).
Zuurkool is terug te voeren als voedselbron tot de 4e eeuw voor Christus! Historisch gezien diende het als een bron van voedingsstoffen tijdens de wintermaanden, toen vers voedsel schaars was. Dit komt omdat een goede fermentatie de voedingswaarde van kool behoudt en tegelijkertijd de gewenste sensorische eigenschappen creëert. Hippocrates beschreef zuurkool ook als een gezondheidsvoedsel en een medicinale remedie in zijn geschriften.
Zuurkool is populair in Centraal- en Oost-Europese culturen, maar het is ook te vinden in de West-Europese keuken en Amerika.

Wat is de wetenschap achter zuurkool?
Wanneer je koolbladeren combineert met zout en ze een paar weken goed bedekt laat op een koele en droge plaats, activeer je anaërobe gisting.
De aanwezige bacteriën in de groente en de ingesloten lucht zijn meestal melkzuurbacteriën (LAB). Deze LAB breken af en gebruiken de suikers die in kool aanwezig zijn om daarin te groeien. Het zout trekt al het overtollige water uit de bladeren.
Terwijl ze groeien, zetten LAB complexe biomoleculen van kool om in eenvoudigere bioactieve ingrediënten. Daarom zijn LAB van cruciaal belang voor een succesvolle fermentatie.
Ze produceren organische zuren, bacteriocines, vitamines en smaakstoffen die verantwoordelijk zijn voor veel van de karakteristieke sensorische eigenschappen van zuurkool, waaronder een langere houdbaarheid, smaak en voedingswaarde (1).
Van deze bacteriën is ook bekend dat ze hoge probiotische en darmvriendelijke eigenschappen hebben. Is dat het?

6 verrassende voordelen van zuurkool
1. Kankerschild
Alle kruisbloemige groenten hebben een kenmerkende geur die hen beschermt tegen insecten en carnivoren. Dezelfde verbindingen - isothiocyanaten, glucosinolaten, ascorbigeen en ascorbinezuur - beschermen ons tegen kanker.
Ze verminderen de DNA-schade en het aantal celmutaties bij kankerpatiënten. Het is bekend dat zuurkool een hoog gehalte aan deze verbindingen bevat (2).
Het concentratieniveau is echter sterk afhankelijk van de fermentatieomstandigheden van de kool. Daarom is het bewijs niet doorslaggevend.
2. Hulp bij spijsvertering
Vroeger werden bepaalde groenten en gekookt voedsel gefermenteerd om hun houdbaarheid, veiligheid en smaak te verbeteren. Maar recent onderzoek zegt dat gefermenteerd voedsel verbeterde nutritionele en functionele eigenschappen heeft.
Dit kan zijn omdat de bioactieve substraten worden omgezet in bioactieve en meer biologisch beschikbare eindproducten.
Er is ook een mogelijkheid dat zuurkool bacteriële en andere microbiële stammen bevat die genetisch vergelijkbaar zijn met die gebruikt als probiotica (3).
Elke dag 7-10 g zuurkool eten kan de spijsvertering verbeteren door een gezonde darm en zijn microbioom te behouden.

3. Cardiovasculaire bescherming
Hartaandoeningen zijn het resultaat van vele factoren, waaronder verhoogde oxidatieve stress, verdikte en verharde bloedvaten, onbalans van calciumionen, ontsteking van spieren, accumulatie van stikstofmonoxide, enz.
Omdat kool glucosinolaten, isothiocyanaten en andere fenolische verbindingen bevat, kunnen ook hun gefermenteerde versies - zuurkool - je hart beschermen. Hoe?
Zuurkool kan de productie van stikstofmonoxide voorkomen, oxidatieve stress verminderen, de mineralenbalans herstellen en de productie van ontstekingsbevorderende chemicaliën beheersen (4).

Including sauerkraut along with cruciferous veggies in your diet can prevent age-related bone degenerative diseases, i.e., osteoporosis and osteoarthritis (5).
But, beware of high-sodium sauerkraut preparations. They cause calcium loss via urine. Hence, pick a low sodium variant or have a fresher batch of it.
5. Anti-inflammatory Effects
Chronic inflammation plays a critical role in various chronic diseases. Our immune system cells produce different pro-inflammatory chemicals or mediators like nitric oxide, eicosanoids, and cytokines. One of the most effective ways to tackle inflammation is to regulate or block the production of these mediators.
The good news is, sauerkraut can suppress nitric oxide production (4). In fact, it has a higher potency than fresh cabbage. The phytochemicals in sauerkraut also inhibit the synthesis of cytokines, eicosanoids, and other prostaglandins at the molecular level (4).
Hence, the right sauerkraut, in combination with precise medical care, can prevent and treat arthritis, irritable bowel disease (IBS), asthma, gastric ulcers, and, in some cases, diabetes.
6. Anxiety And Depression Buster
Recent research and medical studies have established that your brain and gut are connected. There is bidirectional communication between the brain and gut. Dysbiosis of gut microbiota is associated with anxiety and depression.
But, the administration of probiotics produces anxiolytic- and antidepressant-like activities in animal studies. Plant-based fermented foods like sauerkraut have abundant probiotic microbes – like Lactobacillus – that improve cognition and mental health (6), (7).

Sauerkraut contains phenolic compounds and glucosinolates. Sinigrin and glucobrassicin (examples of glucosinolates) play an important role in cancer prevention.
